Cream Cheese Filled Chocolate Cupcake

This delicious chocolate cupcake will surprise them when they discovered the cream cheese and chocolate chips inside.  It's guaranteed that they will like it. This chocolate cupcake can also be stored for a couple of days at room temperature and 3 or 4 days in the refrigerator.

For the best homemade Cream Cheese Filled Chocolate Cupcake results, use the best quality ingredients such as for the cocoa use Dutch Process Cocoa, good quality cream cheese and pure vanilla extract.  Following is the recipe.

Ingredients for cupcake:

2 cups (260 grams) flour (all-purpose)

1 ½  cups (300 grams) granulated sugar

½ cup (50 grams) cocoa powder

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 cup (240 ml) milk

1 cup (240 ml) of prepared espresso coffee

1 cup (240 ml) vegetable oil

2 large eggs

1 teaspoon vanilla (use the extract one)

 

For Filling:

8 ounces (226 grams) cream cheese, softened

1/3 cup (65 grams) granulated sugar

1 egg

¾ cup (126 grams) semisweet chocolate chips

 
Cream cheese filling:

Combine cream cheese and granulated sugar, beat until light and fluffy. Add egg, beat again until well combined. Fold in the chocolate chips. Set aside.

Cupcakes:

Sift together the first 6 ingredients above in a large bowl. In a large measuring bowl, combine milk, vegetable oil and espresso coffee, mix well.  Stir the wet into the dry ingredient, mix with electric mixer about 2 minutes.  Add one egg and vanilla extract continue mixing then add the second egg. Do not over beat.  This batter is so runny it is easier to fill the muffin pan by pouring all the batter into the big measuring cup.  Line muffin pan with paper liners and fill the lined muffin pans with the batter about 1/3 of it.

Spoon 1 heaping teaspoon of cream cheese and chocolate chips filling into the center of each cupcake; pour the remaining batter over filling. Bake at 350 degrees (F) or 180 degrees (C) for 18 to 20 minutes. To check whether the baking is done or not, insert a toothpick into the side of chocolate part, when it comes out with no batter stick to it then it is done.  Remove from the oven and put on the wire rack.
